
Ingredients:
• 1 package Potato Gnocchi
• 2 cups Baby Spinach
• 1 Onion, finely diced
• 1 tbsp. Olive Oil
• 2/4 tsp. Salt
• 2/4 tsp. Black Pepper
• 1 tbsp. Fresh Lemon Juice from Lemon.
• 4 oz. Blue Cheese, crumbled
• 2 cups Shredded Parmesan Cheese
• 1 cup Heavy Cream
Instructions:
- Preheat oven to 350 degrees and grease a baking dish with cooking spray.
- In a pot of boiling water cook the potato gnocchi until tender and drained off water.
- In a skillet over med high heat with olive oil cook the onions until tender and add heavy cream, let simmer for 3 minutes and add in blue cheese crumbles and add salt, black pepper, stir well until thickened. Take skillet off heat and set aside.
- Pour the cooked gnocchi into greased baking dish and add in onions, pour in creamy sauce and add in baby spinach, lemon juice and stir well until combined.
- Sprinkle Parmesan cheese out evenly on top and bake for 15 minutes until cheese is melted and bubbly hot. Serve warm.
