Salmon Potato Salad

This Potato Salad has salmon in a creamy dressing for a delicious side dish.

Ingredients:

• 1 Fresh Salmon Fillets

• 8 Potatoes, peeled and diced

• 1 Red Onion, finely diced

• 3 tbsp. Dill chopped

• 2 tbsp. Mayonnaise

• 1 tbsp. Yellow Mustard

• Salt and Black Pepper to taste

• Olive Oil

• Parsley for garnish

Instructions:

  1. Pat dry the salmon with paper towel and brush salmon with olive oil on both sides.
  2. In a skillet over med high heat add in the salmon and cook for 4 minutes on both sides. Remove from heat and set on a plate let cool.
  3. In a pot of boiling water cook the potatoes until tender and drained.
  4. In a bowl add in mayonnaise, mustard, dill and salt, black pepper, stir well until combined.
  5. Take a fork and flake the salmon into pieces and stir in salmon into creamy sauce.
  6. Add in the potatoes, stir well until combined.
  7. Serve with garnish of parsley.
