Cauliflower Tots

This Cauliflower Tots is a cauliflower base tator tots makes a delicious appetizer or side dish.


Ingredients:

• 4 cups Cauliflower Florets, cut into florets

• 1 cup Panko Breadcrumbs

• 1/2 Onion, grated

• 1/3 cup Shredded Cheddar Cheese

• 1/2 cup Grated Parmesan Cheese

• Salt and Black Pepper to taste

Instructions:

  1. Preheat oven to 400 degrees and grease a baking pan with cooking spray.
  2. In a pot of boiling water add cauliflower florets until tender and drained.
  3. In a food processor add cauliflower florets and pulse until grain like rice.
  4. Place on clean kitchen towel and squeeze out the liquid. Place in a bowl.
  5. In the bowl with cauliflower florets add in onion, parmesan cheese and cheddar cheese, breadcrumbs, egg, season with salt and black pepper. Stir well until combined.
  6. Spoon about 1 tbsp. In your hand and shape like a tator tot shape.
  7. Place on baking pan and bake for 25 minutes until golden brown and let cool for 5 minutes before serving.
