
Ingredients:
• 4 cups Cauliflower Florets, cut into florets
• 1 cup Panko Breadcrumbs
• 1/2 Onion, grated
• 1/3 cup Shredded Cheddar Cheese
• 1/2 cup Grated Parmesan Cheese
• Salt and Black Pepper to taste
Instructions:
- Preheat oven to 400 degrees and grease a baking pan with cooking spray.
- In a pot of boiling water add cauliflower florets until tender and drained.
- In a food processor add cauliflower florets and pulse until grain like rice.
- Place on clean kitchen towel and squeeze out the liquid. Place in a bowl.
- In the bowl with cauliflower florets add in onion, parmesan cheese and cheddar cheese, breadcrumbs, egg, season with salt and black pepper. Stir well until combined.
- Spoon about 1 tbsp. In your hand and shape like a tator tot shape.
- Place on baking pan and bake for 25 minutes until golden brown and let cool for 5 minutes before serving.
