
Ingredients:
Dough:
• 2 cups Self Rising Flour
• 1/4 cup Granulated Sugar
• 2 1/2 tsp. Active Dry Yeast
• 1 cup Warm Water
• 6 tbsp. Butter, softened
• 1 Egg
Coating:
• 1/2 tbsp. Ground Cinnamon
• 1 cup Brown Sugar
Icing:
• 1 cup Powdered Sugar
• 2 Tbsp. Milk
Instructions:
- Preheat oven to 350 degrees and line a muffin pan tins with muffin liners.
- Make the dough, in a bowl add in dry yeast, 1/2 warm water, sugar and stir well until yeast is dissolved and let set for 10 minutes.
- In a bowl of stand up mixer, add in yeast and remaining water, egg and beat well until combined.
- Add in flour, beat well until dough form and add in butter, beat well until combined.
- Place the dough into greased mixing bowl and cover with damp kitchen towel and let rise at room temperature for 1 hour until double in size.
- On a floured surface roll the dough out using a rolling pin and cut the dough into 1″ sized pieces.
- In a bowl add in cinnamon and brown sugar and stir well until combined.
- Roll each dough into cinnamon sugar mixture and place 8 dough pieces into muffin liners tins and bake for 35 minutes until light golden brown and let cool completely on wire rack.
- In a mixing bowl add sugar and cinnamon, mix well until combined.
- Drizzle icing over each muffin and serve.
