Baked Potato with Tuna and Mayonnaise

This Baked Potato with Tuna Salad is easy recipe to make for side dish at weeknight meal or lunch.

Ingredients:

• 1 Baked Potato

• 1 can Tuna Fish

• 2 tbsp. Mayonnaise

• 1 Onion, finely chopped

• 1 Boiled Egg, finely diced

• Salt and Black Pepper to taste

• 1 tsp. Vegetable Oil

• 2 tbsp. Butter

Instructions:

  1. Preheat oven to 400 degrees and grease a baking sheet with cooking spray.
  2. Roll the baked potato in the oil to coated all the sides, prick holes in the baked potato and place on baking sheet for 1 1/2 hours until done.
  3. In a bowl add in tuna fish, onion and boiled eggs, mayonnaise and stir well until combined.
  4. When the baked potato is cooked is baked and cut into the center and mash the inside with a fork and add tuna fish salad and season with salt, black pepper.
