Swiss Chard Patties

These Swiss Chard Patties are easy to make to serve for appetizer or side dish.

Ingredients:

• 3 tbsp. Flour

• 4 cups Swiss Chard, finely chopped

• 2 cups Parsnip, finely grated

• 1/2 cup Onion, finely chopped

• 1/3 tsp. Minced Garlic

• 1/2 cup Parsley, finely chopped

• 1/2 cup Vegetable Oil

• Salt and Black Pepper to taste

• 1/3 cup Shredded Cheddar Cheese

• 1/4 cup Parmesan Cheese

• 2 Eggs

Yogurt Dip:

• 1/3 cup Plain Yogurt

• 1 tsp. Mustard Paste

• 1 tsp. Honey

• 1/2 tsp. Salt

• 1/2 tsp. Black Pepper

Instructions:

  1. In a bowl add in Swiss Chard and parsnip, onion, garlic, herbs and cheese, flour, salt, black pepper and eggs, mix well until combined. Form into patties.
  2. Heat a skillet with oil over med high heat cook until light golden brown on both sides and drain off greased on paper towel lined plate.
  3. Make the yogurt Dip, in a bowl add ingredients and stir well until combined.
  4. Place swiss patties on a plate and garnish with yogurt dip.
