
Ingredients:
Cake:
• 2 cups Self Rising Flour
• 2 cups Granulated Sugar
• 1/2 cup Shredded Coconut
• 1 cup Pecans, finely chopped, extra for garnish.
• 1 tsp. Vanilla Extract
• 1/2 cup Vegetable Oil
• 1 cup Buttermilk
• 1 stick Unsalted Butter, softened
• 5 Egg Yolks
• 5 Egg Whites
Frosting:
• 1 package Cream Cheese
• 1 stick Unsalted Butter, softened
• 1 tsp. Buttermilk
• 1 package Powdered Sugar
• 1 tsp. Vanilla Extract
Instructions:
Cake:
- Preheat oven to 350 degrees and grease three round cake pans with cooking spray.
- In a bowl of stand up mixer add in egg yolks and oil, beat well until fluffy.
- Add in flour, sugar, buttermilk, butter and vanilla extract, egg yolk beat well until combined.
- Add in the egg whites beat well until combined and stir in the coconut, pecans until well mixed.
- Divide the batter into three greased round cake pans and bake for 35 minutes until light golden brown. Let cool completely on wire rack.
- Make the frosting, in a bowl of stand up mixer add ingredients and beat well until fluffy and smooth.
- Take one cake layer place on cake platter frost it and lay second cake layer on top frost it and lay third cake layer on top frost it. Garnish with extra chopped pecans.
