Mexican Cinnamon Cookies

Mexican Cookies are crispy and buttery with cinnamon is a delicious dessert.

Ingredients:

Cookie Dough:

• 2 cups Self Rising Flour

• 1 cup Powdered Sugar

• 2 tsp. Ground Cinnamon

• 2 tsp. Vanilla Extract

• 1 cup Butter, softened

• 1 Egg

Topping:

• 2 tbsp. Granulated Sugar

• 1/4 cup Ground Cinnamon

Instructions:

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Make the cookie dough, in a bowl of stand up mixer add flour and sugar, cinnamon, vanilla extract and butter, egg, beat well until combined.
  3. In a bowl add in topping ingredients and beat well until combined.
  4. Place the cookie dough on a floured surface and roll out dough out using a rolling pin to thickness and use cookies cutter cut out the dough and place on parchment paper lined baking sheet. Place in the fridge for 1 hour to chill.
  5. Bake for 12 minutes until light golden brown and let cool for 5 minutes then dust with cinnamon sugar mixture coating both sides. 
  6. Place back in the oven and bake for 5 minutes until light golden brown and let cool completely on wire rack before serving.
