Blueberry Ice Cream

This Blueberry Ice Cream is sweet and easy to make for a delicious treat.

Instructions:

• 1 pint Fresh Blueberries

• 1 cup Granulated Sugar, divided

• 1 tsp. Salt

• 1 tbsp. Fresh Lemon Juice from Lemon

• 2 tsp. Vanilla Extract

• 1 cup Milk

• 2 cups Heavy Whipping Cream

Instructions:

  1. In a saucepan over med high heat add in blueberries and 1/2 cup sugar, lemon juice and bring to a boil. Pour in a blender to blend until puree, set aside.
  2. In a saucepan over med high heat add in milk, heavy cream and remaining sugar, cook until sugar is dissolved.Add in the milk mixture, stirring occasionally until thickened and take off heat and add in salt, blueberry puree, stir well until combined.
  3. In a freezer safe bowl add in ice cream and cover with plastic wrap and freezer for 4 hours until frozen.
  4. Place in a ice cream maker and churn according to manufacturer’s instructions and place in freezer safe bowl and freezer for 2 hours before serving.
