Sweet Potato Gnocchi with Brown Sugar and Sage

This Sweet Potato Gnocchi with Brown Sugar and Sage is a delicious side dish to serve for weeknight meal.

Ingredients:

• 4 Sweet Potatoes

• 1 1/2 cup Flour

• 1/4 cup Brown Sugar

• 1/2 tsp. Salt

• 1/4 cup Parmesan Cheese

• 1 Egg

Sauce:

• 4 Shallots, sliced

• 4 Fresh Sage, chopped

• Black Pepper to taste

• 1 stick Unsalted Butter

Instructions:

  1. Preheat oven to 400 degrees and grease baking sheet with cooking spray.
  2. Place sweet potatoes on the greased baking sheet and use a fork to poke holes in the sweet potatoes. Bake for 40 minutes and let cool for 15 minutes.
  3. Place baked sweet potatoes on cutting board and cut in half and scoop the inside out and place in a sieve to remove liquid from sweet potatoes.
  4. Place mash sweet potatoes in a mixing bowl and add in egg, cheese, brown sugar, add flour slowly in the bowl and use clean hands to knead dough until smooth.
  5. Place dough on floured flat surface and cut into 1 inch pieces of dough.
  6. Place on floured baking sheet and cover with plastic wrap and place in fridge to chill until ready to bake.
  7. In a large pot of boiling salty water place dough and cook and remove immediately and place on a plate.
  8. In a skillet over med high heat add in butter and shallots, sage cook until tender.
  9. Pour the sauce over gnocchi and serve warm.
