
Ingredients:
• 4 Sweet Potatoes
• 1 1/2 cup Flour
• 1/4 cup Brown Sugar
• 1/2 tsp. Salt
• 1/4 cup Parmesan Cheese
• 1 Egg
Sauce:
• 4 Shallots, sliced
• 4 Fresh Sage, chopped
• Black Pepper to taste
• 1 stick Unsalted Butter
Instructions:
- Preheat oven to 400 degrees and grease baking sheet with cooking spray.
- Place sweet potatoes on the greased baking sheet and use a fork to poke holes in the sweet potatoes. Bake for 40 minutes and let cool for 15 minutes.
- Place baked sweet potatoes on cutting board and cut in half and scoop the inside out and place in a sieve to remove liquid from sweet potatoes.
- Place mash sweet potatoes in a mixing bowl and add in egg, cheese, brown sugar, add flour slowly in the bowl and use clean hands to knead dough until smooth.
- Place dough on floured flat surface and cut into 1 inch pieces of dough.
- Place on floured baking sheet and cover with plastic wrap and place in fridge to chill until ready to bake.
- In a large pot of boiling salty water place dough and cook and remove immediately and place on a plate.
- In a skillet over med high heat add in butter and shallots, sage cook until tender.
- Pour the sauce over gnocchi and serve warm.
