Ground Beef Stew

This Ground Beef Stew is made with ground beef, mushrooms, carrots and roasted tomatoes for a delicious meal.

Ingredients:

• 1 lb. Ground Beef

• 1 pint Fresh Mushrooms, sliced

• 2 cups Carrots, sliced

• 4 Red Potatoes, peeled and sliced

• 4 cups Beef Broth

• 1 tbsp. Worcestershire Sauce

• 2 tbsp. Tomato Paste

• 1 tbsp. Minced Garlic

• 1 tbsp. Olive Oil

• 2 cups Shredded Cheddar Cheese

• 2 cups Shredded Parmesan Cheese

• Salt and Black Pepper to taste

Instructions:

  1. In a skillet over med high heat add ground beef and onions until browned and tender, drained off greased.
  2. In a preheat oven at 350 degrees and place sliced potatoes with cheeses on greased baking sheet and bake for 35 minutes until light golden brown. Set aside.
  3. In a large pot over med high heat add in mushrooms and carrots, pour beef broth over top and add in tomato paste, Worcestershire sauce, minced garlic, salt and black pepper, stir well until combined.
  4. Let simmer until mushrooms and carrots are tender and bubbly hot.
  5. Add in ground beef and onions and simmer for 5 more minutes.
  6. Spoon the stew in bowl and add roasted potatoes on top. Serve.
