Mushroom Pot Pie

This Mushroom Pot Pie is loaded with fresh mushrooms, creamy filling and buttery crust for a delicious weeknight meal.

Ingredients:

• 1 pint Mushrooms, chopped

• 2 Garlic Cloves, minced

• 2 tbsp. Self Rising Flour

• 1 cup Vegetable Broth

• 1 Fresh Lemon from Lemon Juice

• 1 container Cream

• Salt and Black Pepper to taste

• 1 Store Brought Pillsbury Puff Pastry

• 1 Egg Yolk, slightly beaten

Instructions:

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. In a large skillet over med high heat with oil, saute the mushrooms until golden brown.
  3. Add in garlic, saute for 1 minute and add in the flour, pour in the vegetable broth, stir occasionally until smooth for 5 minutes.
  4. Season with salt and black pepper.
  5. Pour in the greased baking dish and roll the puff pastry on top out evenly.
  6. Bake for 20 minutes until puff pastry is light golden brown and filling is bubbly hot. Serve warm.
