Ranch Chicken Casserole

This Ranch Chicken Casserole is easy to make to serve for a weeknight meal.

Ingredients:

• 1 lb. Boneless, Skinless Chicken, cut into cubed

• 2 lb. Potatoes, peeled and sliced

• 6 Slices Cooked Bacon, crumbled

• 1 packet Dry Ranch Seasoning Mix

• 1 cup Diced Onion

• 3 Cloves Garlic, minced

• 1 tsp. Garlic Powder

• 1 tsp. Smoked Paprika

• 1/2 tsp. Red Pepper Flakes

• 1 tsp. Salt

• 1/2 tsp. Black Pepper

• 1 cup Mayonnaise

• 1 cup Milk

• 1 package Shredded Cheddar Cheese

Instructions:

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. Make the dressing, in a bowl add in mayonnaise, milk, dressing mix, stir well until combined.
  3. In a pot of boiling water cook the potatoes until tender and drained off water.
  4. In a skillet over med high heat add in bacon cook until crispy and place on a paper towel lined plate to drained off greased.
  5. In the same skillet over med high leave some of bacon greased and add in diced onion and saute until soft about 2 minutes and add in garlic and cook for 25 minutes.
  6. Add in potatoes, chicken, bacon and garlic powder and smoked paprika, red pepper flakes and 1/2 of the cheese, salt and black pepper, stir in the dressing.
  7. Pour the mixture into greased baking dish and spread out evenly remaining cheese and bake for 25 minutes until cheese is melted. Serve warm.
