
Ingredients:
• 1 lb. Boneless, Skinless Chicken, cut into cubed
• 2 lb. Potatoes, peeled and sliced
• 6 Slices Cooked Bacon, crumbled
• 1 packet Dry Ranch Seasoning Mix
• 1 cup Diced Onion
• 3 Cloves Garlic, minced
• 1 tsp. Garlic Powder
• 1 tsp. Smoked Paprika
• 1/2 tsp. Red Pepper Flakes
• 1 tsp. Salt
• 1/2 tsp. Black Pepper
• 1 cup Mayonnaise
• 1 cup Milk
• 1 package Shredded Cheddar Cheese
Instructions:
- Preheat oven to 350 degrees and grease a baking dish with cooking spray.
- Make the dressing, in a bowl add in mayonnaise, milk, dressing mix, stir well until combined.
- In a pot of boiling water cook the potatoes until tender and drained off water.
- In a skillet over med high heat add in bacon cook until crispy and place on a paper towel lined plate to drained off greased.
- In the same skillet over med high leave some of bacon greased and add in diced onion and saute until soft about 2 minutes and add in garlic and cook for 25 minutes.
- Add in potatoes, chicken, bacon and garlic powder and smoked paprika, red pepper flakes and 1/2 of the cheese, salt and black pepper, stir in the dressing.
- Pour the mixture into greased baking dish and spread out evenly remaining cheese and bake for 25 minutes until cheese is melted. Serve warm.
