Caramel Pecan Banana Cake

This Caramel Pecan Banana Cake is moist and flavored with bananas, pecan and caramel is a delicious dessert.

Ingredients:

Cake:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 1 tsp. Vanilla Extract

• 1/4 cup Chopped Pecans

• 2 Banana, mashed

• 1/4 cup Plain Yogurt

• 1/2 cup Butter

• 2 Eggs

Peanut Butter Buttercream Frosting

• 1 cup Creamy Peanut Butter

• 1 tsp. Vanilla Extract

• 2 1/2 cup Powdered Sugar

• 1 tsp. Vanilla Extract

• 2 Sticks Unsalted Butter, softened

• 1/4 tsp. Salt

Instructions:

  1. Preheat oven to 350 degrees and grease two round cake pans with cooking spray.
  2. Make the cake, in a bowl of stand up mixer add in flour sugar, oil and vanilla extract, bananas and creamy peanut butter, butter and eggs, beat well until combined.
  3. Stir in the chopped pecans and mix well until combined.
  4. Divide the batter into two greased round cake pans and bake for 35 minutes and let cool completely on wire rack.
  5. Make the frosting, in a bowl of stand up mixer add butter and peanut butter, vanilla extract and salt, powdered sugar and beat well until smooth and fluffy.
  6. Take one cake layer place on cake platter frost it and lay second cake layer on top frost it.
