Raspberry Tarts

Raspberry Tarts are easy to make with few ingredients for a delicious dessert.

Instructions:

Crust:

• 2 cups Self Rising Flour

• 1/4 cup Granulated Sugar

• Pinch of Salt

• 4 tbsp. Melted Butter

Filling:

• 1 cup Mascarpone Cheese

• 1 tsp. Vanilla Extract

• 1 tsp. Heavy Cream

• 3 tbsp. Powdered Sugar

• 1/4 cup Seedless Raspberry Jam

Toppings:

• 4 Fresh Raspberries

• Grated Chocolate

Instructions:

  1. Preheat oven to 350 degrees and line tart pans with parchment paper in each one.
  2. Make the crust, In a food processor add in the flour and sugar until finely ground. Add in the butter pulse until moist sand.
  3. Press the dough into each tart pans and place on a baking sheet. Bake for 12 minutes until light golden brown. Let cool for 15 minutes. Remove parchment paper.
  4. Make the filling, In a bowl add mascarpone cheese, vanilla extract and sugar stir well until combined and smooth.
  5. Place the raspberry jam in microwave safe bowl and microwave until melted. Let cool for 10 minutes and stir in the filling until combined.
  6. Pour the filling in each tart crust and then garnish with raspberries and grated chocolate.
