
Ingredients;
• 4 Potatoes, peeled and sliced into rounds
• 1 Onion, sliced
• 10 Eggs
• 2/4 Extra Virgin Olive Oil
• Salt and Black Pepper to taste
Instructions:
- In a skillet over med high heat add in olive oil and add in the potatoes, cook until brown about 10 minutes.
- Add in the onions and season with salt, black pepper, cook until potato is tender.
- In a bowl add in the eggs, whisk eggs until combined.
- Turn your oven to broiler.
- Add in the bowl of the eggs, the potatoes, onions.
- Clean the same skillet and add in olive oil and add in mixture into the skillet.
- Cook until eggs are done.
- Put the skillet in the oven until eggs have set and light golden brown on top. Serve warm.
