Lemon Poppyseed Muffins

Lemon Poppyseed Muffins are moist and filled with lemon flavor and poppyseed.

Ingredients:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 3 tbsp. Poppyseeds

• 1 tbsp. Fresh Lemon Zest from Lemon

• 2 tbsp. Lemon Juice from Lemon

• 1 cup Milk

• 1/3 cup Melted Unsalted Butter

• 2 Eggs

• 2 tbsp. Sparkling Sugar to top each muffins

Instructions:

  1. Preheat oven to 350 degrees and grease a muffin pan with cooking spray.
  2. In a bowl of stand up mixer add in the flour, sugar, lemon zest, poppyseeds,  mix well.
  3. Add in the lemon juice, milk and butter, and eggs, beat well until smooth.
  4. Pour the batter into greased muffin pan tins top  with sugar and bake for 35 minutes. Let muffins cool for 10 minutes.
