
Ingredients:
• 2 cups Self Rising Flour
• 1 cup Granulated Sugar
• 3 tbsp. Poppyseeds
• 1 tbsp. Fresh Lemon Zest from Lemon
• 2 tbsp. Lemon Juice from Lemon
• 1 cup Milk
• 1/3 cup Melted Unsalted Butter
• 2 Eggs
• 2 tbsp. Sparkling Sugar to top each muffins
Instructions:
- Preheat oven to 350 degrees and grease a muffin pan with cooking spray.
- In a bowl of stand up mixer add in the flour, sugar, lemon zest, poppyseeds, mix well.
- Add in the lemon juice, milk and butter, and eggs, beat well until smooth.
- Pour the batter into greased muffin pan tins top with sugar and bake for 35 minutes. Let muffins cool for 10 minutes.
