
Ingredients:
Cupcakes:
• 2 cups Self Rising Flour
• 1 cup Granulated Sugar
• 2/4 Shredded Sweetened Coconut
• 1/2 tsp. Coconut Extract
• 1 tsp. Vanilla Extract
• 1/2 cup Milk
• 2 Eggs
Cream Cheese Frosting:
• 1 package Cream Cheese, softened
• 2 cups Powdered Sugar
• 1/3 tsp. Vanilla Extract
• 1 tbsp. Milk
• 1/2 cup Salted Butter, softened
• Grated Coconut for garnish
Instructions:
Cupcakes:
- Preheat oven to 350 degrees and line a muffin pan tins with cupcake liners.
- In a bowl of stand up mixer, add in the flour, sugar, shredded coconut, coconut extract and vanilla extract, milk, egg, beat well until combined.
- Pour the batter into cupcake liners and bake for 35 minutes until light golden brown. Let it cool for about 10 minutes before frosting.
- Make the frosting, in a bowl of stand up mixer add in the cream cheese, butter, vanilla extract and milk, powdered sugar, beat well until smooth and fluffy.
- Spread the frosting on each cupcake and garnish with coconut. Enjoy!
