Coconut Cupcakes

These cupcakes are moist and delicious with flavor of coconut top with cream cheese frosting.

Ingredients:

Cupcakes:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 2/4 Shredded Sweetened Coconut

• 1/2 tsp. Coconut Extract

• 1 tsp. Vanilla Extract

• 1/2 cup Milk

• 2 Eggs

Cream Cheese Frosting:

• 1 package Cream Cheese, softened

• 2 cups Powdered Sugar

• 1/3 tsp. Vanilla Extract

• 1 tbsp. Milk

• 1/2 cup Salted Butter, softened

• Grated Coconut for garnish

Instructions:

Cupcakes:

  1. Preheat oven to 350 degrees and line a muffin pan tins with cupcake liners.
  2. In a bowl of stand up mixer, add in the flour, sugar, shredded coconut, coconut extract and vanilla extract, milk, egg, beat well until combined.
  3. Pour the batter into cupcake liners and bake for 35 minutes until light golden brown. Let it cool for about 10 minutes before frosting.
  4. Make the frosting, in a bowl of stand up mixer add in the cream cheese, butter, vanilla extract and milk, powdered sugar, beat well until smooth and fluffy.
  5. Spread the frosting on each cupcake and garnish with coconut. Enjoy!
