Lemon Cupcakes

These Lemon Cupcakes are moist and filled with lemon flavor.

Ingredients:

Cupcakes:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 1 cup Lemon Juice from 2 Lemons

• 1 stick Unsalted Butter, softened

• 2 Eggs

Mascarpone Frosting:

• 1 container Mascarpone Cheese

• 1 package Cream Cheese

• 1/3 cup Powered Sugar

• 1/3 tsp. Vanilla Extract

• 1 tbsp. Lemon Juice from Lemon

Instructions:

Cupcakes:

  1. Preheat oven to 350 degrees and line a cupcake pan with cupcake liners.
  2. In a bowl of stand up mixer add in the flour, sugar, butter, lemon juice and eggs, beat well.
  3. Pour the batter into each cupcake liners.
  4. Bake for 35 minutes until light golden brown and let cupcakes cool for 10 minutes before frosting.
  5. Make the frosting, in a bowl of stand up mixer add in the marcarpone cheese and cream cheese, vanilla extract, lemon juice and then powdered sugar, beat well until smooth.
  6. Use a piping bag to frost each cupcake and Enjoy!
