
Ingredients:
Cupcakes:
• 2 cups Self Rising Flour
• 1 cup Granulated Sugar
• 1 cup Lemon Juice from 2 Lemons
• 1 stick Unsalted Butter, softened
• 2 Eggs
Mascarpone Frosting:
• 1 container Mascarpone Cheese
• 1 package Cream Cheese
• 1/3 cup Powered Sugar
• 1/3 tsp. Vanilla Extract
• 1 tbsp. Lemon Juice from Lemon
Instructions:
Cupcakes:
- Preheat oven to 350 degrees and line a cupcake pan with cupcake liners.
- In a bowl of stand up mixer add in the flour, sugar, butter, lemon juice and eggs, beat well.
- Pour the batter into each cupcake liners.
- Bake for 35 minutes until light golden brown and let cupcakes cool for 10 minutes before frosting.
- Make the frosting, in a bowl of stand up mixer add in the marcarpone cheese and cream cheese, vanilla extract, lemon juice and then powdered sugar, beat well until smooth.
- Use a piping bag to frost each cupcake and Enjoy!
