Red Velvet Cupcakes

Red Velvet Cupcakes are moist and top with cream cheese frosting.

Ingredients:

Cupcakes:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 3 tbsp. Unsweetened Cocoa Powder

• 1 tbsp. Vanilla Extract

• 2 tbsp. Red Food Coloring

• 1/2 cup Vegetable Oil

• 2 tbsp. Vanilla Yogurt

• 1 cup Milk

• 1 Egg

Cream Cheese Frosting:

• 1/4 cup Cream Cheese

• 2 tbsp. Unsalted Butter, softened

• 1 tsp. Vanilla Extract

• 2 cups Powdered Sugar

Instructions:

Cupcakes:

  1. Preheat oven to 350 degrees and line a muffin pan tins with cupcake liners.
  2. In a bowl of stand up mixer add in the flour, sugar and cocoa powder, mix well.
  3. Add in the yogurt, vanilla extract and red food coloring, oil, milk eggs, beat well until combined.
  4. Pour the cake batter into each cupcake liners and bake for 35 minutes until light golden brown. Let cupcakes cool for 10 minutes before frosting.
  5. Make the frosting, in a bowl of stand up mixer add in cream cheese, butter, beat well.
  6. Add in the vanilla extract, powdered sugar, beat well until fluffy and smooth.
  7. Use a piping bag to frost each cupcake and Enjoy!
