Sweet Potato Casserole

This Sweet Potato Casserole is easy to make with mini marshmallows on top.

Ingredients:

• 4 Sweet Potatoes, peeled and cut into 1 inch pieces

• 2 2/4 cup Mini White Marshmallows

• 1/2 cup Brown Sugar

• 1 tsp. Vanilla Extract

• 4 tbsp. Unsalted Butter, softened

• 1/2 cup Milk

• 2/4 tsp. Salt

Instructions:

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. In a large pot of boiling water cook the sweet potatoes until tender about 15 minutes.
  3. Drained and placed the sweet potatoes back in the pot add in the milk, butter, vanilla extract and salt. Use potato masher to mash potatoes and ingredients together.
  4. Pour the mixture into the greased baking dish and top with mini marshmallows.
  5. Bake for 25 minutes until marshmallows is light golden brown and sweet potato mixture is bubbly hot. Serve warm.
