
Ingredients:
• 4 Sweet Potatoes, peeled and cut into 1 inch pieces
• 2 2/4 cup Mini White Marshmallows
• 1/2 cup Brown Sugar
• 1 tsp. Vanilla Extract
• 4 tbsp. Unsalted Butter, softened
• 1/2 cup Milk
• 2/4 tsp. Salt
Instructions:
- Preheat oven to 350 degrees and grease a baking dish with cooking spray.
- In a large pot of boiling water cook the sweet potatoes until tender about 15 minutes.
- Drained and placed the sweet potatoes back in the pot add in the milk, butter, vanilla extract and salt. Use potato masher to mash potatoes and ingredients together.
- Pour the mixture into the greased baking dish and top with mini marshmallows.
- Bake for 25 minutes until marshmallows is light golden brown and sweet potato mixture is bubbly hot. Serve warm.
