Gingersnap Cookies

These Gingersnap Cookies are chewy, soft inside and crispy around the edges.

Ingredients:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 2 tsp. Ground Cinnamon

• 2 tsp. Ground Cloves

• 2 tsp. Ground Ginger

• 1/3 cup Molasses

• 2 Eggs

• Extra Sugar to roll the cookie

Instructions:

  1. Preheat oven to 350 degrees and grease a cookie sheet with cooking spray.
  2. In a bowl of stand up mixer add in the flour, sugar, cinnamon and cloves, ginger, mix well until combined.
  3. Add in the molasses and eggs one at time. Stir well.
  4. Use a cookie scoop to scoop the cookie batter into greased cookie sheet.
  5. Bake for 12 minutes until light golden brown. Let cool for 5 minutes and then roll each cookie in the extra sugar. Enjoy!
