Taiwanese Pineapple Cake

Taiwanese Pineapple Cake is buttery and filled with pineapple filling for a delicious dessert.

Ingredients:

Filling:

• 1 Fresh Pineapple, finely chopped

• 1/4 cup Granulated Sugar

• 1/4 cup Ground Cinnamon

• 1/2 cup Light Corn Syrup

Dough:

• 1 1/4 cup Cake Flour

• 2 tbsp. All-Purpose Flour

• 1/4 tsp. Salt

• 1/2 cup Powdered Sugar

• 1/4 cup Milk Powder

• 1 1/4 tbsp. Unsalted Butter, softened

• 1 Egg

Instructions:

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Make the pineapple filling, in a saucepan over med high heat add in corn syrup, sugar, cinnamon, pineapple and bring to simmer until bubbly hot and thickened like jam. Take off heat and let cool completely.
  3. Make the dough, in a bowl of stand up mixer with dough hook attachment add in cake flour and all-purpose flour, salt, sugar, milk powder, butter, egg and beat well until combined until a dough.
  4. Roll the dough out on floured surface using a rolling pin and cover the plastic wrap and place in fridge for 25 minutes.
  5. Take the dough out of the fridge and cut into 2 rectangle.
  6. Place one rectangle dough on the baking sheet and spread out the pineapple filling evenly and then place second rectangle dough on top of filling. Close the dough on the sides up tightly.
  7. Bake for 35 minutes until light golden brown and let cool completely on wire rack before serving.
