Blueberry Cream Cheesecake

This Blueberry Cream Cheesecake is creamy and sweet with fresh blueberries for a delicious dessert.

Ingredients:

Graham Cracker Crust:

• 1 1/2 cup Graham Cracker Crumbs

• 2 tbsp. Granulated Sugar

• 1 tbsp. Brown Sugar

• 6 tbsp. Melted Butter

Blueberry Cheesecake:

• 8 packages Cream Cheese, softened

• 1/2 cup Half and Half

• 1 cup Heavy Cream

• 3 cups Powdered Sugar

• 2 tbsp. Granulated Sugar

• 1 pint Fresh Blueberries

• Blue Food Coloring

• 2 tsp. Vanilla Extract

Instructions:

  1. Preheat oven to 350 degrees and line a springform pan with parchment paper.
  2. In a bowl add in crust ingredients and mix well until combined.
  3. Press the crust in the bottom of pan and bake for 12 minutes and let cool completely.
  4. Make blueberry cream cheese, in a bowl of stand up mixer add in cream cheese, heavy cream and vanilla extract, blue food coloring, beat well until combined.
  5. Add in granulated sugar and powdered sugar, and fresh blueberries, beat well until combined and smooth.
  6. Pour the filling out evenly over the crust in springform pan and place in the fridge for 8 hours or overnight before serving.
