Brazilian Carrot Cake

This Brazilian Carrot Carrot Cake is moist and made  with carrots top with chocolate frosting for a delicious dessert.

Ingredients:

Cake:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 2 1/4 cup Shredded Carrots

• 1/2 cup Vegetable Oil

• 1/2 cup Plain Yogurt

• 3 Eggs

Chocolate Frosting:

• 1/2 cup Granulated Sugar

• 1/2 cup Cocoa Powder

• 1/2 tsp. Salt

• 1 tsp. Vanilla Extract

• 1 can Sweetened Condensed Milk

• 1/2 cup Milk

• 3 tbsp. Unsalted Butter, softened

• Chocolate Sprinkles for garnish

Instructions:

  1. Preheat oven to 350 degrees and grease a bundt cake pan with cooking spray.
  2. Make the cake, in a bowl of stand up mixer add in flour, sugar and mix well until combined.
  3. Add in butter, vanilla extract and condensed milk, milk, yogurt oil egg and beat well until combined. Stir in carrots until well mixed.
  4. Pour the batter into greased bundt cake pan and bake for 35 minutes until light golden brown and let cool completely on wire rack.
  5. Make the frosting, in a bowl of stand up mixer add in sugar, cocoa powder, salt, mix well until combined. Add in butter and vanilla extract, milk and condensed milk, beat well until smooth and fluffy.
  6. Lay the bundt cake platter frost it and garnish with chocolate sprinkles.
