Banana Chocolate Chip Cupcakes

Banana Chocolate Chip Cupcakes are moist, sweet with bananas and chocolate chips for a delicious dessert.

Ingredients:

Cupcakes:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 2/4 cup Semi-Sweet Chocolate Chips

• 1 1/4 cup Sliced Bananas for garnish

• 3/4 cup Mashed Bananas

• 1/2 tsp. Vanilla Extract

• 1/2 cup Buttermilk

• 6 tbsp. Unsalted Butter, softened

• 1 Egg

• 1 Egg White

Frosting:

• 1 package Cream Cheese

• 1/2 cup Unsalted Butter, softened

• 2 1/2 cups Powdered Sugar

• 1 tsp. Vanilla Extract

Instructions:

Cupcakes:

  1. Preheat oven to 350 degrees and line a cupcake liners in a muffin pan tins.
  2. In a bowl of stand up mixer add in flour, sugar, mashed bananas and vanilla extract, buttermilk and butter, egg and egg yolk, beat well until combined.
  3. Stir in chocolate chips mix well until combined.
  4. Divide the batter into muffin liners tins and bake for 35 minutes and let cool completely on wire rack.
  5. Make the frosting, in a bowl of stand up mixer add ingredients and beat well until smooth and fluffy.
  6. Frost each cupcake with frosting and garnish with sliced bananas.
