
Ingredients:
• 5 cups Zucchini, cut into chunks
• 2 Potatoes, peeled, cut into diced
• 1 Onion, diced
• 2 Cloves Garlic, minced
• 1/2 tsp. Dried Rosemary
• 1/2 tsp. Thyme
• 1/2 tsp. Celery Salt
• 1/2 tsp. Salt
• 1/2 tsp. Black Pepper
• 3 cups Chicken Broth
• 1 tbsp. Worcestershire Sauce
• 1/2 cup Half and Half
• 1 cup Shredded Cheddar Cheese
• 2 tbsp. Butter
Instructions:
- In a large pot over med high heat add in melted butter, onions and cook until tender for 5 minutes.
- Add in garlic, zucchini, thyme and dried rosemary, celery salt and salt, black pepper, cook for 5 minutes and stirring occasionally.
- Add in potatoes, chicken broth and Worcestershire sauce, bring to a boil and cover with lid and let simmer for 29 minutes.
- Take pot off the heat add use immersion blender to blend until smooth.
- Place pot back on heat and add in half & half, cheese, stir occasionally until creamy and cheese is melted. Serve warm.
