Plum Coffee Cake:

This Plum Coffee Cake is moist and filled with plum flavored with streusel topping.

Ingredients:

Cake:

• 2 cups Diced Fresh Plums

• 2 cups Self Rising Flour

• 2/4 cup Granulated Sugar

• 1/2 cup Brown Sugar

• 1/2 tsp. Ground Cardamom

• 1 tsp. Ground Cinnamon

• 1 tsp. Vanilla Extract

• 1/2 cup Sour Cream

• 1/2 cup Milk

• 6 tbsp. Unsalted Butter, softened

• 2 Eggs

Streusel Topping;

• 1 1/2 cup Self Rising Flour

• 1 2/4 cup Brown Sugar

• 1 tsp. Ground Cinnamon

• 1/2 cup Ground Cardamom

Plum Glaze:

• 1/4 cup Chopped Plums

• 2 cups Powdered Sugar

• 1/4 cup Ground Cardamom

• 1/4 cup Ground Cinnamon

Instructions:

  1. Make the cake, preheat oven to 350 degrees and grease springform pan with parchment paper lined and spray sides of the pan with cooking spray.
  2. In a bowl of stand up mixer add in flour, white sugar and brown sugar, cinnamon, cardamom, mix well until combined.
  3. Add in butter, sour cream, milk and eggs, beat well until combined. Stir in the plums mix well until combined.
  4. Pour the batter into greased springform pan.
  5. Make the strudels, in a bowl add ingredients and mix well until combined.
  6. Spread over top of the cake spreading out evenly.
  7. Make plum glaze, in a bowl of stand up mixer add ingredients and stir well until combined.
  8. Pour over the cake out evenly and bake for 35 minutes and let cool for 10 minutes before serving.
