Banana Pecan Muffins

These Banana Pecan Muffins are moist and loaded with banana and pecans for a delicious dessert.

Ingredients:

• 2 cups Mashed Bananas

• 1/4 cup Chopped Pecans

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 1 tsp. Vanilla Extract

• 1 tbsp. Fresh Lemon Juice from Lemon

• 1 tsp. Fresh Lemon Zest from Lemon

• 2/4 cup Vegetable Oil

• 1/2 cup Heavy Cream

• 1 1/2 cup Plain Yogurt

• 2 Eggs

Instructions:

  1. Preheat oven to 350 degrees and line a muffin pan tins with muffin liners.
  2. In a bowl of stand up mixer add in flour, sugar, lemon zest and lemon juice, vanilla extract and yogurt, lemon juice, heavy cream and mashed bananas, beat well until combined.
  3. Stir in the chopped pecans mix well until combined.
  4. Pour the batter into muffin liners tins and bake for 35 minutes until light golden brown and let cool for 10 minutes before serving.
