
Ingredients:
• 2 cups Mashed Bananas
• 1/4 cup Chopped Pecans
• 2 cups Self Rising Flour
• 1 cup Granulated Sugar
• 1 tsp. Vanilla Extract
• 1 tbsp. Fresh Lemon Juice from Lemon
• 1 tsp. Fresh Lemon Zest from Lemon
• 2/4 cup Vegetable Oil
• 1/2 cup Heavy Cream
• 1 1/2 cup Plain Yogurt
• 2 Eggs
Instructions:
- Preheat oven to 350 degrees and line a muffin pan tins with muffin liners.
- In a bowl of stand up mixer add in flour, sugar, lemon zest and lemon juice, vanilla extract and yogurt, lemon juice, heavy cream and mashed bananas, beat well until combined.
- Stir in the chopped pecans mix well until combined.
- Pour the batter into muffin liners tins and bake for 35 minutes until light golden brown and let cool for 10 minutes before serving.
