Plum Almond Muffins

These Plum Almond Muffins are moist and filled with fresh plums and loaded with almonds for a sweet dessert.

Ingredients:

• 1 pint Fresh Plums, stem removed, washed and rinsed, pat dry

• 1 cup Toasted Sliced Almonds,

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 2 tsp. Almond Extract

• 1 tsp. Vanilla Extract

• 1/4 cup Milk

• 4 tbsp. Unsalted Butter, softened

• 2 Eggs

Instructions:

  1. Preheat oven to 350 degrees and line a muffin pan tins with muffin liners.
  2. In a bowl of stand up mixer add in the flour, sugar and vanilla extract, almond extract, milk and eggs, beat well until combined.
  3. Stir in the plums and toasted almond, mix well until combined.
  4. Pour the batter into muffin liners tins and bake for 35 minutes and let cool for 10 minutes.
