Plum Muffins

These Plum Muffins is moist and loaded with fresh plums for a delicious dessert.

Ingredients:

• 1 pint Fresh Plums, washed and rinsed, stem removed, pat dried.

• 2 cups Self Rising Flour

• 1/2 cup Granulated Sugar

• 1/2 cup Light Brown Sugar

• 1 tsp. Ground Cinnamon

• 1 tsp . Vanilla Extract

• 1/2 cup Vegetable Oil

• 1 tsp. Fresh Lemon Zest from Lemon

• 1 tbsp. Fresh Lemon Juice from Lemon

• 1 cup Plain Yogurt

• 2 Eggs

Instructions:

  1. Preheat oven to 350 degrees and line a muffin pan with muffin liners.
  2. In a bowl of stand up mixer add in the flour, white sugar, brown sugar, cinnamon, vanilla extract lemon juice and oil, yogurt, eggs, beat well until combined. Stir in fresh plums mix well until combined.
  3. Pour the batter into muffin liners tins and bake for 35 minutes until light golden brown and let cool for 10 minutes on wire rack before serving.
