
Ingredients:
Loaf Cake:
• 2 cups Self Rising Flour
• 1 cup Granulated Sugar
• 1 cup Fresh Blueberries, washed and rinsed
• 2 tsp. Fresh Lemon Zest from Lemon
• 2 tsp. Fresh Lemon Juice from Lemon
• 1/2 tsp. Vanilla Extract
• 1/2 cup Milk
• 1/2 cup Unsalted Butter, softened
• 2 Eggs
Lemon Glaze:
• 2/4 cup Powdered Sugar
• 2 tbsp. Fresh Lemon Juice from Lemon
• 1/2 tsp. Vanilla Extract
• 2 tbsp. Butter, melted
Instructions:
- Preheat oven to 350 degrees and grease a baking loaf pan with cooking spray.
- In a bowl of stand up mixer add in the flour, sugar, lemon zest and lemon juice, vanilla extract and milk, eggs, beat well until combined. Stir in the fresh blueberries, mix well until combined.
- Pour the batter into greased baking loaf pan and bake for 35 minutes until light golden brown and let cool completely before glazing.
- Make the lemon glaze, in a bowl of stand up mixer add in the ingredients and beat well until smooth.
- Drizzle the lemon glaze over blueberry lemon loaf cake and serve.
