Rhubarb Strawberry Crumble

This Rhubarb Strawberry Crumble is the delicious dessert with rhubarb and strawberry with a crisp topping.

Ingredients:

Filling:

• 3 cups Fresh Rhubarb, cut into pieces

• 3 2/4 cup Fresh Strawberries, stem removed and quartered

• 3/4 cup Granulated Sugar

• 1 tsp. Vanilla Extract

• 1/3 cup Cornstarch

• 1 tsp. Fresh Orange Zest from Orange

• 1 tsp. Salt

Toppings:

• 2/4 cup Self Rising Flour

• 1/2 cup Granulated Sugar

• 1/2 cup Light Brown Sugar

• 2/4 cup Old Fashioned Oats

• 1/2 tsp. Salt

Instructions:

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. In a saucepan over med high heat add 1 cup strawberries and 1 cup rhubarb, bring to a boil for 5 minutes until jam sauce form.
  3. Remove from heat and add in the salt, orange juice, vanilla extract and stir well until combined
  4. Pour in a bowl to cool for 5 minutes and add in remaining fruits and cornstarch, sugar and stir well until combined.
  5. Pour the filling into greased baking dish.
  6. Make the topping, in a bowl of stand up mixer add ingredients and mix well until combined.
  7. Spread out evenly over top of the filling and bake for 35 minutes until light golden brown and bubbly hot. Let cool for 5 minutes before serving.
