
Ingredients:
Filling:
• 3 cups Fresh Rhubarb, cut into pieces
• 3 2/4 cup Fresh Strawberries, stem removed and quartered
• 3/4 cup Granulated Sugar
• 1 tsp. Vanilla Extract
• 1/3 cup Cornstarch
• 1 tsp. Fresh Orange Zest from Orange
• 1 tsp. Salt
Toppings:
• 2/4 cup Self Rising Flour
• 1/2 cup Granulated Sugar
• 1/2 cup Light Brown Sugar
• 2/4 cup Old Fashioned Oats
• 1/2 tsp. Salt
Instructions:
- Preheat oven to 350 degrees and grease a baking dish with cooking spray.
- In a saucepan over med high heat add 1 cup strawberries and 1 cup rhubarb, bring to a boil for 5 minutes until jam sauce form.
- Remove from heat and add in the salt, orange juice, vanilla extract and stir well until combined
- Pour in a bowl to cool for 5 minutes and add in remaining fruits and cornstarch, sugar and stir well until combined.
- Pour the filling into greased baking dish.
- Make the topping, in a bowl of stand up mixer add ingredients and mix well until combined.
- Spread out evenly over top of the filling and bake for 35 minutes until light golden brown and bubbly hot. Let cool for 5 minutes before serving.
