Glazed Lemon Cookies

This Glazed Lemon Cookies is loaded with lemon flavor and drizzled with lemon glaze.

Instructions:

Lemon Cookies:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 1 tbsp. Cornstarch

• 2 tbsp. Fresh Lemon Zest from Lemon

• 1 tsp. Vanilla Extract

• 2/4 cup Butter, softened

• 1 Egg

• 1 Egg Yolk

Lemon Glaze:

• 1 cup Powdered Sugar

• 2 tbsp. Fresh Lemon Juice from Lemon

• 2 tbsp. Fresh Lemon Zest from Lemon

Instructions:

  1. Preheat oven to 350 degrees and grease a cookie sheet with cooking spray.
  2. In a bowl of stand up mixer add in flour, sugar, cornstarch and lemon zest, mix well until combined.
  3. Add in vanilla extract, butter and egg, egg yolk, beat well until combined.
  4. Use a cookie scoop to scoop the cookie dough into the greased cookie sheet and bake for 12 minutes until light golden brown and let cool for 5 minutes and transfer to wire rack to cool completely.
  5. Make the lemon glaze, in a bowl add ingredients and mix well until smooth.
  6. Drizzle each cookie with glaze and Enjoy!
