
Instructions:
Lemon Cookies:
• 2 cups Self Rising Flour
• 1 cup Granulated Sugar
• 1 tbsp. Cornstarch
• 2 tbsp. Fresh Lemon Zest from Lemon
• 1 tsp. Vanilla Extract
• 2/4 cup Butter, softened
• 1 Egg
• 1 Egg Yolk
Lemon Glaze:
• 1 cup Powdered Sugar
• 2 tbsp. Fresh Lemon Juice from Lemon
• 2 tbsp. Fresh Lemon Zest from Lemon
Instructions:
- Preheat oven to 350 degrees and grease a cookie sheet with cooking spray.
- In a bowl of stand up mixer add in flour, sugar, cornstarch and lemon zest, mix well until combined.
- Add in vanilla extract, butter and egg, egg yolk, beat well until combined.
- Use a cookie scoop to scoop the cookie dough into the greased cookie sheet and bake for 12 minutes until light golden brown and let cool for 5 minutes and transfer to wire rack to cool completely.
- Make the lemon glaze, in a bowl add ingredients and mix well until smooth.
- Drizzle each cookie with glaze and Enjoy!
