Raspberry Crumble Bars

This Raspberry Crumble Bars are chewy with oats, raspberry filling top crumb topping.

Instructions:

Crumb:

• 2 cups Self Rising Flour

• 3 cups Old Fashioned Oats

• 1 cup Brown Sugar

• 1 cup Unsalted Butter, cold and cubed

Filling:

• 1 pint of Fresh Raspberries

• 2 cups Raspberry Jam

• 1 tsp. Lemon Juice

• 1 tbsp  Flour

Instructions:

  1. Preheat oven to 350 degrees and line a square baking dish with parchment paper.
  2. Make the crumble, in a bowl of stand up mixer add in the oats and flour, brown sugar, butter, beat well until combined and no lumps of butter left.
  3. Pour the crumble in the bottom of baking dish and press down on it spread out evenly.
  4. Make the filling, in a bowl add in the raspberries, raspberry jam and lemon juice, flour, mash the ingredients with a masher until combined.
  5. Spread the filling over top of crumble.
  6. Bake for 35 minutes until light golden brown. Let cool for 5 minutes before serving.
