Meatball Potato Casserole

This casserole is made with meatballs and potatoes, cheese is easy recipe to make on weeknight meal.

Ingredients:

Meatballs:

• 1 lb. Ground Beef

• 1/3 cup Flour

• 1/2 cup Italian Breadcrumbs

• 1 tsp. Worcestershire Sauce

• 1 Egg

• Salt and Black Pepper to taste

Other Ingredients:

• 4 cups Diced Potatoes

• 1 Diced Onion

• 1 Red Bell Peppers, sliced

• 1 can Mushroom Soup

• 2 cups Shredded Cheddar Cheese

• Salt and Black Pepper to taste

Instructions:

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. Make the meatballs, in a bowl add in the beef, onion, breadcrumbs and egg, Worcestershire sauce, salt and black pepper, using clean hands and mix well, form into balls.
  3. In another bowl add in the potatoes, red bell peppers and salt and black pepper, stir well.
  4. Add in the mushroom soup, stir well coated.
  5. Place the meatballs into the greased baking dish and add in the veggies and top with cheese.
  6. Cover with tin foil and bake for 1 hour until potato are tender and cheese is melted and bubbly hot.
