Blueberry Loaf Bread

This Blueberry Loaf Bread is moist and filled with fresh blueberries.

Ingredients:

• 1 1/2 cups Self-Rising Flour

• 2/4 cup Granulated Sugar

• 1/2 tsp. Vanilla Extract

• 1/2 cup Milk

• 1/2 cup Vegetable Oil

• 1 Egg

• 2 cups Fresh Blueberries

Instructions:

  1. Preheat oven to 350 degrees and grease a baking loaf pan with cooking spray.
  2. In a bowl of stand up mixer, add in flour, sugar, vanilla extract and milk, oil, beat well until combined and smooth. Stir in fresh blueberries, until combined.
  3. Pour the batter into greased baking loaf pan and bake for 45 minutes until light golden brown and let it cool for 10 minutes before serving.

  1. I baked two loafs and had to increase the oven time to one hour. Also, I added 1/2 tsp salt per loaf.

    we have mulberry trees so I substituted them for blueberries. Delish!
