Mango Mochi

Mango Mochi is creamy and sweet with fresh mango for a delicious dessert.

Ingredients:

Dough:

• 1 1/4 cup Glutinous Rice Flour

• 2 tbsp. Cornstarch

• Yellow Food Coloring

• 1 1/2 cup Milk

• 1 tbsp. Unsalted Butter

Filling:

• 2 tbsp. Granulated Sugar

• 2 tbsp. Mango Puree

• 1 tbsp. Instant Vanilla Pudding

• 1 cup Heavy Whipping Cream

Instructions:

  1. Make the dough, in a saucepan over med high heat add in rice flour, cornstarch and sugar, milk food coloring and cover with lid and cook until thickened and then uncover and cook for 3 more minutes and take off heat and add in butter, stir well until combined.
  2. In a bowl of stand up mixer with dough hook add in dough and knead for 4 minutes until smooth and let cool completely.
  3. Make the filling, in a bowl of stand up mixer add in whipped cream, sugar and mango puree and beat well until soft peaks form. Add in pudding mix and beat well until creamy.
  4. On a cornstarch surface roll out the dough using a rolling pin and divide the dough into 5 equal portions.
  5. Pipe the mango cream in the center of each dough and place on a parchment paper lined baking sheet and place in freezer for 1 hour and before serving let set at room temperature.
