Japanese Strawberry Shortcake

This Japanese Strawberry Shortcake is layer with sponge cake, whipped cream frosting and fresh strawberries for a delicious dessert.

Ingredients:

Sponge Cake:

• 2/4 cup Cake Flour

• 1 tsp. Baking Powder

• 1/2 tsp. Salt

• 1/2 cup Granulated Sugar

• 1 tsp. Vanilla Extract

• 1/2 tsp. Fresh Lemon Juice from Lemon

• 1/2 cup Warm Milk

• 1/2 cup Butter, melted

• 2 Egg Yolks

Whipped Cream Frosting:

• 2/4 White Chocolate, melted

• 1/4 cup Sweetened Condensed Milk

• 1/3 cup Icing Sugar

• 1 2/4 cup Cold Whipping Cream

• 3 cups Sliced Fresh Strawberries for filling

Instructions:

Cake:

  1. Preheat oven to 350 degrees and grease two round cake pans with cooking spray.
  2. In a bowl of stand up mixer add in cake flour, baking powder and salt, sugar, mix well until combined.
  3. Add in vanilla extract and lemon juice, butter, egg yolks , beat well until combined.
  4. Divide the batter into two greased round cake pans and bake for 35 minutes until light golden brown and let cool completely on wire rack.
  5. Make whipped cream frosting, in a bowl of stand up mixer add ingredients and beat well until smooth and fluffy.
  6. Assembly, lay one cake layer on cake platter frost it add few slices strawberries and then top with second cake layer, frost it and garnish with remaining strawberries.
