Spinach Pie

This Spinach Pie is filled with fresh spinach and feta cheese filling in a phyllo crust.

Ingredients:

• Store Brought Phyllo Pastry

• 1 bunch Fresh Spinach, chopped

• 1/2 cup Fresh Dill, chopped

• 1/2 cup Fresh Parsley, chopped

• 2 Cloves Garlic, minced

• 1 Onion, chopped

• Salt to taste

• 1/2 tsp. Cayenne Pepper

• 1 tsp. Black Pepper

• 1/4 tsp. Fresh Lemon Juice from Lemon

• 1 tbsp. Fresh Lemon Zest from Lemon

• 1 tbsp.  Olive Oil

• 1 block Feta Cheese, grated

• 1 package Shredded Mozzarella Cheese

• 6 Eggs, slightly beaten

Instructions:

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. In a pot of boiling water cook the spinach until tender and drained and squeeze out as much water as you can in clean kitchen towel.
  3. In a skillet over med high heat cook the onion, garlic until tender for 5 minutes. Place in a bowl and stir well until combined with spinach.
  4. Add in feta cheese, cheddar cheese, dill, parsley lemon juice and lemon zest, black pepper and cayenne pepper, stir well until combined.
  5. Add in the eggs, salt and mix well until combined.
  6. Lay the pastry out on flat surface and spoon filling inside and wrap the dough over top of the filling.
  7. Place in greased baking dish and bake for 1 hour until light golden brown and filling is bubbly hot.
  8. Remove from oven and let cool for 10 minutes before serving.
