
Ingredients:
• Store Brought Phyllo Pastry
• 1 bunch Fresh Spinach, chopped
• 1/2 cup Fresh Dill, chopped
• 1/2 cup Fresh Parsley, chopped
• 2 Cloves Garlic, minced
• 1 Onion, chopped
• Salt to taste
• 1/2 tsp. Cayenne Pepper
• 1 tsp. Black Pepper
• 1/4 tsp. Fresh Lemon Juice from Lemon
• 1 tbsp. Fresh Lemon Zest from Lemon
• 1 tbsp. Olive Oil
• 1 block Feta Cheese, grated
• 1 package Shredded Mozzarella Cheese
• 6 Eggs, slightly beaten
Instructions:
- Preheat oven to 350 degrees and grease a baking dish with cooking spray.
- In a pot of boiling water cook the spinach until tender and drained and squeeze out as much water as you can in clean kitchen towel.
- In a skillet over med high heat cook the onion, garlic until tender for 5 minutes. Place in a bowl and stir well until combined with spinach.
- Add in feta cheese, cheddar cheese, dill, parsley lemon juice and lemon zest, black pepper and cayenne pepper, stir well until combined.
- Add in the eggs, salt and mix well until combined.
- Lay the pastry out on flat surface and spoon filling inside and wrap the dough over top of the filling.
- Place in greased baking dish and bake for 1 hour until light golden brown and filling is bubbly hot.
- Remove from oven and let cool for 10 minutes before serving.
