Sticky Toffee Pudding

This pudding is sticky, gooey is a delicious toffee dessert.

Ingredients:

• 1 package Pitted Dried Dates, roughly chopped

• 1 bottle Toffee Sauce

• 1 1/2 cup Self Rising Flour

• 1 1/4 tsp. Baking Powder

• 3/4 cup Dark Brown Sugar

• 1 tsp. Canola Oil

• 1 tsp. Vanilla Extract

• 1 tbsp. Molasses

• 1 cup Boiling Water

• 1/4 cup Unsalted Butter, softened

• 2 Eggs at room temperature

Instructions:

  1. Preheat oven to 350 degrees and grease a muffin pan with cooking spray.
  2. In a saucepan over med high heat with boiling water add dates and baking soda, stir well until combined.
  3. 3. Place in blender and puree until chunky smooth.
  4. In a bowl of stand up mixer add in brown sugar, butter, beat well until smooth and add egg, oil and molasses, vanilla extract, beat well until combined.
  5. Add in the flour and dates, beat well until combined and smooth.
  6. Pour in the muffin pan and bake for 25 minutes and let cool for 5 minutes. Serve on a plate and drizzle toffee sauce over top.
