
Ingredients:
• 1 package Pitted Dried Dates, roughly chopped
• 1 bottle Toffee Sauce
• 1 1/2 cup Self Rising Flour
• 1 1/4 tsp. Baking Powder
• 3/4 cup Dark Brown Sugar
• 1 tsp. Canola Oil
• 1 tsp. Vanilla Extract
• 1 tbsp. Molasses
• 1 cup Boiling Water
• 1/4 cup Unsalted Butter, softened
• 2 Eggs at room temperature
Instructions:
- Preheat oven to 350 degrees and grease a muffin pan with cooking spray.
- In a saucepan over med high heat with boiling water add dates and baking soda, stir well until combined.
- 3. Place in blender and puree until chunky smooth.
- In a bowl of stand up mixer add in brown sugar, butter, beat well until smooth and add egg, oil and molasses, vanilla extract, beat well until combined.
- Add in the flour and dates, beat well until combined and smooth.
- Pour in the muffin pan and bake for 25 minutes and let cool for 5 minutes. Serve on a plate and drizzle toffee sauce over top.
