Creamy Chickpea Soup

This Chickpea Soup is quick and easy soup recipe to make for a comfort food.

• 3 cans Chickpeas

• 2 cups Chicken Broth

• 1 tbsp. Minced Garlic Cloves

• 1/3 tsp. Dried Thyme

• 1/3 tsp. Dried Oregano

• Season with Crushed Red Pepper

• Salt and Black Pepper to taste

Instructions:

  1. In a blender add in the chickpeas and blend until smooth.
  2. In a pot over med high heat add in minced garlic with olive oil, saute until tender.
  3. Add in the chickpeas, chicken broth, thyme, oregano, red pepper, salt and black pepper, stir well until combined.
  4. Cook over med high heat about 13 minutes, stirring occasionally.
  5. Serve warm.
