Vegan Lentil Burgers

These Vegan Lentil Burgers are made with dried split red lentils and veggies for healthy burger to have for lunch.

Ingredients:

• 1 1/4 cup Dried Split Red Lentils

• 1 Onion, finely diced

• 1 Carrot, grated

• 3 Cloves Garlic, minced

• 1 tbsp. Tomato Paste

• 1 tsp. Smoked Paprika

• 1 tsp. Cumin

• 1 tsp. Sea Salt

• 1/2 tsp. Garlic Powder

• 1/2 tsp. Onion Powder

• 1/2 tsp. Black Pepper

• Water

Instructions:

  1. In a bowl add lentils and pour water in the bowl to cover lentils and let soak for 2 hours and drain, rinsed.
  2. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  3. In a food processor add lentils and onion, carrots, garlic and tomato paste and add remaining ingredients.
  4. Pulse until combined until a mixture.
  5. Shape into burger patties and place on parchment paper lined baking sheet.
  6. Bake for 17 minutes and flip over while baking.
  7. Serve warm in hamburger buns.
