Bunny Butt Cupcakes

Bunny Butt Cupcakes are so cute to serve at Easter and the cupcakes are so easy to make with vanilla cupcake and marshmallow tails with green frosting for the grass.

Ingredients:

Cupcakes:

• 2 cups Self Rising Flour

• 1 cup Granulated Sugar

• 1 tsp. Vanilla Extract

• 1 stick Unsalted Butter, softened

• 2 Eggs

Decorations:

• 1 package regular size marshmallows

• 1 container of white Frosting

• 1 tube Pink decorator’s icing

• 1 tube green decorator’s icing

White Sanding Sugar

Instructions:

Cupcakes:

  1. Preheat oven to 350 degrees and line a  cupcake pan with cupcake liners with cooking spray.
  2. In a bowl of stand up mixer add in the flour, sugar  and vanilla extract, beat well until combined.
  3. Add in the butter and eggs, beat well until combined
  4. Pour the batter into cupcake liners tin pan and bake for 35 minutes until light golden brown. Let cupcakes cook for 10 minutes
  5. Pipe the green frosting on top of cupcake and shape the frosting like grass on top.
  6. Cut about 1/3 cup of marshmallow to make a bunny butt and on the intact of the marshmallow with white frosting and then sprinkle sanding sugar. Place the marshmallow into green grass frosting.
  7. Take another marshmallow and cut on the diagonal to cut off two triangle shaped marshmallow pieces this will be two feet.
  8. Place marshmallow feet into the green grass frosting against bunny butt.
  9. Pipe the pink tube frosting on the marshmallow pads of the feet to make it look like a feet.
