
Ingredients:
Cake:
• 1 2/4 cup Self Rising Flour
• 1 cup Light Brown Sugar
• 1 tsp. Ground Cinnamon
• 1 tsp. Ground Nutmeg
• 1 tsp. Ground Ginger
• 2 cups Grated Carrots
• 1/4 cup Toasted Chopped Walnuts plus extra garnish on top
• 1/2 cup Vegetable Oil
• 1/3 cup Unsalted Butter
• 2 Eggs
Cream Cheese Frosting:
• 1 package Cream, softened
• 2 tbsp. Unsalted Butter, softened
• 3/4 cup Powdered Sugar
• 1/3 cup Vanilla Extract
Instructions:
- Preheat oven to 350 degrees and grease loaf pan with cooking spray.
- In a bowl of stand up mixer add in the flour, brown sugar and cinnamon, nutmeg, ginger, stir well until combined.
- Add in the vanilla extract, carrots and walnuts, stir well until combined. Add in the eggs stir well until combined.
- Pour the cake batter into greased loaf pan and bake for 55 minutes until light golden brown and let cake cool for 10 minutes.
- Make the frosting, in stand up mixer add in the cream cheese and butter, sugar, vanilla extract, stir well until smooth and fluffy.
- Spread the frosting on top of the loaf cake and sprinkles with chopped walnuts.
