Carrot Cake Loaf

This Carrot Cake Loaf is moist and it have cream cheese frosting on top.

Ingredients:

Cake:

• 1 2/4 cup Self Rising Flour

• 1 cup Light Brown Sugar

• 1 tsp. Ground Cinnamon

• 1 tsp. Ground Nutmeg

• 1 tsp. Ground Ginger

• 2 cups Grated Carrots

• 1/4 cup Toasted Chopped Walnuts plus extra garnish on top

• 1/2 cup Vegetable Oil

• 1/3 cup Unsalted Butter

• 2 Eggs

Cream Cheese Frosting:

• 1 package Cream, softened

• 2 tbsp. Unsalted Butter, softened

• 3/4 cup Powdered Sugar

• 1/3 cup Vanilla Extract

Instructions:

  1. Preheat oven to 350 degrees and grease loaf pan with cooking spray.
  2. In a bowl of stand up mixer add in the flour, brown sugar and cinnamon, nutmeg, ginger, stir well until combined.
  3. Add in the vanilla extract, carrots and walnuts, stir well until combined. Add in the eggs stir well until combined.
  4. Pour the cake batter into greased loaf pan and bake for 55 minutes until light golden brown and let cake cool for 10 minutes.
  5. Make the frosting, in stand up mixer add in the cream cheese and butter, sugar, vanilla extract, stir well until smooth and fluffy.
  6. Spread the frosting on top of the loaf cake and sprinkles with chopped walnuts.
