Carrot Oatmeal Cookies

Carrot Oatmeal Cookies are soft inside and crispy around the edges.

Ingredients:

• 3/4 cup Self Rising Flour

• 1/2 cup Light Brown Sugar

• 1 tsp. Ground Cinnamon

• 1 cup Grated Carrots

• 1 cup Rolled Oats

• 1/2 cup Rasins

• 1/2 cup Coconut

• 1/2 cup Chopped Walnuts

• 1/2 cup Unsalted Butter

• 1 Egg

Instructions:

  1. Preheat oven to 350 degrees and grease cookie sheet with cooking spray.
  2. In a bowl of stand up mixer add in the flour, brown sugar and cinnamon, oats, raisins, coconut, chopped walnuts, mix well until combined.
  3. Add in the grated carrots and egg, butter, beat well until combined and smooth.
  4. Use a cookie scoop to scoop the cookie dough into the greased cookie sheet.
  5. Bake for 12 minutes until light golden brown and let cookies cool for 10 minutes before serving.
