
Ingredients:
• 3/4 cup Self Rising Flour
• 1/2 cup Light Brown Sugar
• 1 tsp. Ground Cinnamon
• 1 cup Grated Carrots
• 1 cup Rolled Oats
• 1/2 cup Rasins
• 1/2 cup Coconut
• 1/2 cup Chopped Walnuts
• 1/2 cup Unsalted Butter
• 1 Egg
Instructions:
- Preheat oven to 350 degrees and grease cookie sheet with cooking spray.
- In a bowl of stand up mixer add in the flour, brown sugar and cinnamon, oats, raisins, coconut, chopped walnuts, mix well until combined.
- Add in the grated carrots and egg, butter, beat well until combined and smooth.
- Use a cookie scoop to scoop the cookie dough into the greased cookie sheet.
- Bake for 12 minutes until light golden brown and let cookies cool for 10 minutes before serving.
