
Ingredients:
Cake:
• 2 cups All-Purpose Flour
• 1 cup Granulated Sugar
• 1 cup Light Brown Sugar
• 1 tsp. Ground Cinnamon
• 2/4 tsp. Ground Nutmeg
• 2/4 tsp. Ground Allspice
• 4 cups Grated Carrots
• 4 cups Chopped Walnuts
• 1 cup Veg Oil
• 3 Eggs
Cream Cheese Frosting
• 1 block Cream Cheese, softened
• 1/2 cup Unsalted Butter, softened
• 3 cups Powdered Sugar
• 2 tsp. Vanilla Extract
• 1/4 tsp. Salt
Instructions:
Cake:
- Preheat oven to 350 degrees and grease three round cake pans with cooking spray.
- In a bowl of stand up mixer add in the flour, white sugar and brown sugar, cinnamon and nutmeg, allspice, oil, eggs, beat well until combined. Stir in the carrots and chopped walnuts until well mixed.
- Pour cake batter into three separate round cake pans and bake for 35 minutes. Let cake cool for 10 minutes.
- Make the frosting, in a bowl of stand up mixer add in the ingredients and beat well until smooth and fluffy.
- Assemble, place one cake layer on cake plate, frost it and add the second cake layer on top, frost it and now add in third layer on top, frost it.
- Slice and serve.
