Ricotta Cheesecake

This Ricotta Cheesecake is crustless and made ricotta cheese, egg whites and dusting with powdered sugar.

Ingredients:

• 1/2 cup Self Rising

• 2/4 cup Granulated Sugar

• 2 tbsp. Fresh Orange Zest from one orange

• 1/2 tsp. Vanilla Extract

• 1 lb. Ricotta Cheese, at room temperature

• 4 Eggs, separate the yolks from whites in 2 separate bowls

• Powdered Sugar for dusting

Instructions:

  1. Preheat oven to 350 degrees and grease a round cake pan with cooking spray.
  2. In a bowl of stand up mixer add in the flour, sugar, orange zest and ricotta cheese, vanilla extract, butter, egg yolk, egg whites , beat well until combined.
  3. Pour the cake batter into greased round cake pan and bake for 35 minutes until light golden brown. Let cake cool for 10 minutes before dusting with powdered sugar and serve.
