Cranberry Orange Oat Muffins

Cranberry Orange Oat Muffins is made with fresh cranberries, orange flavored top with oats.

Ingredients:

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 1 tsp. Ground Cinnamon

• 1 1/3 cup Fresh Cranberries,  chopped

• 1 1/3 cup Rolled Oats

• 2 tbsp. Fresh Orange Zest from one orange

• 1/2 cup Fresh Orange Juice from one orange

• 1 tsp. Vanilla Extract

• 1 cup Unsweetened Apple Sauce

• 2 Eggs

Oat Crumb Topping

• 1/2 cup Rolled Oats

• 1/3 cup Flour

• 1 tbsp. Granulated Sugar

• 1/4 cup Light Brown Sugar

• 1 tsp. Ground Cinnamon

• 2 tbsp. Unsalted Butter, softerned

Instructions:

  1. Preheat oven to 350 degrees and grease a muffin pan tins with cooking spray.
  2. In a bowl of stand up mixer add in the flour, sugar, cinnamon and orange zest, orange juice and applesauce. vanilla extract and eggs, beat well until combined.
  3. Stir in the oats, cranberries, mix well until combined.
  4. Pour the batter into greased muffin pan tins.
  5. In a bowl add in the topping ingredients and mix well until combined. Spoon the mixture on top  of each muffin mixture.
  6. Bake for 35 minutes until light golden brown and let cool for 10 minutes before serving.
