
Ingredients:
• 2 cups Self-Rising Flour
• 1 cup Granulated Sugar
• 1 tsp. Ground Cinnamon
• 1 1/3 cup Fresh Cranberries, chopped
• 1 1/3 cup Rolled Oats
• 2 tbsp. Fresh Orange Zest from one orange
• 1/2 cup Fresh Orange Juice from one orange
• 1 tsp. Vanilla Extract
• 1 cup Unsweetened Apple Sauce
• 2 Eggs
Oat Crumb Topping
• 1/2 cup Rolled Oats
• 1/3 cup Flour
• 1 tbsp. Granulated Sugar
• 1/4 cup Light Brown Sugar
• 1 tsp. Ground Cinnamon
• 2 tbsp. Unsalted Butter, softerned
Instructions:
- Preheat oven to 350 degrees and grease a muffin pan tins with cooking spray.
- In a bowl of stand up mixer add in the flour, sugar, cinnamon and orange zest, orange juice and applesauce. vanilla extract and eggs, beat well until combined.
- Stir in the oats, cranberries, mix well until combined.
- Pour the batter into greased muffin pan tins.
- In a bowl add in the topping ingredients and mix well until combined. Spoon the mixture on top of each muffin mixture.
- Bake for 35 minutes until light golden brown and let cool for 10 minutes before serving.
