
Ingredients:
• 2 cups Self-Rising Flour
• 1 cup Granulated Sugar
• 2/4 cup Light Brown Sugar
• 1 tsp. Ground Cinnamon
• 1 cup Grated Carrots
• 1 cup Walnuts, chopped
• 1 tbsp. Fresh Orange Zest from one orange
• 1/4 tbsp. Vegetable Oil
• 1/2 cup Milk
• 1 stick Unsalted Butter, softened
• 2 Eggs
Instructions:
- Preheat oven to 350 degrees and line a muffin tin with muffin liners.
- In a bowl of stand up mixer add in the flour, white sugar and brown sugar, cinnamon and orange zest, oil, milk, butter and eggs, beat well until combined.
- Stir in the carrots and walnuts until combined.
- Pour the batter into muffin tins liners and bake for 35 minutes until light golden brown.
- Let muffins cool for 10 minutes before serving.
