Carrot Walnut Muffins

Carrot Walnut Muffins are so  soft and filled with carrots and walnuts.

Ingredients:

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 2/4 cup Light Brown Sugar

• 1 tsp. Ground Cinnamon

• 1 cup Grated Carrots

• 1 cup Walnuts, chopped

• 1 tbsp. Fresh Orange Zest from one orange

• 1/4 tbsp. Vegetable Oil

• 1/2 cup Milk

• 1 stick Unsalted Butter, softened

• 2 Eggs

Instructions:

  1. Preheat oven to 350 degrees and line a muffin tin with muffin liners.
  2. In a bowl of stand up mixer add in the flour, white sugar and brown sugar, cinnamon and orange zest, oil, milk, butter and eggs, beat well until combined.
  3. Stir in the carrots and walnuts until combined.
  4. Pour the batter into muffin tins liners and bake for 35 minutes until light golden brown.
  5. Let muffins cool for 10 minutes before serving.
